These two words, dried fruits, mean long traditional ways to preserve fresh fruits. These are the ways in which human have a chance to preserve nature's jewelry for a longtime. Dried fruits have a long time history in cookery and have been prized in this field for its nutritional value available all four seasons. All kinds of dried fruits can be kept fresh for 12 months in the cool and dry place

 

 Pistachios, raisins, dates, almonds, walnuts,hazelnuts, apricots, figs, peaches, pears and all other kind of dried fruits are used in domestic cooking; besides their sweet taste they add to the dishes some kind of freshness. For instance, the raisins are used with cereals and yogurt as a nutritious breakfast

 

 In Iran the production history of dried fruits, especially pistachios, dates back to many centuries. That is Middle East where we can find the earliest mention of dried fruits.
